Schezwan Chicken Fried Rice

Schezwan fried rice is a fan-favourite Indo Chinese dish that can be found everywhere from a child’s lunch box to your favourite street cart, to fine dining restaurants. The bold and spicy flavours of our schezwan sauce tossed in with a healthy mix of vegetables, aromatics, herbs and rice make for a mouth-watering meal that’s also rich in nutritional value.

Chef's note:

Make sure your wok or broad pan is smoking hot and seated on a high flame, before sauteing the vegetables and rice in Boombay's 100% natural Schezwan Sauce

Ingredients:

  • 1½ tablespoons of Boombay's Schezwan Sauce
  • 1 cup of Cooked Rice
  • 100 grams of Boneless and Skinless Chicken
  • 2 tablespoons of Sesame Oil
  • 1 tablespoon of Ginger
  • 1 tablespoon of Garlic
  • 1 tablespoon of Celery
  • ½ an Onion
  • 1 Spring Onion
  • 2 teaspoon of Soy Sauce (Tamari Sauce for a gluten-free option)
  • Salt to taste
  • Pepper to taste

Method

Prep
  1. Finely chop the onion, the garlic, the ginger and the celery 
  2. Wash the chicken and cut it into bite-sized pieces

Cook
  1. Heat a wok on high heat and add oil
  2. Once the oil is hot, add the ginger, the garlic and the celery
  3. Cook for 1 minute, add the cubed chicken and continue
  4. Add our Schezwan Sauce to the wok and mix very well
  5. Add the soy sauce and continue to cook
  6. Next add the rice and mix well 
  7. Serve warm

Top the dish with finely chopped celery for a more crunchy bite
