Ful Medame

Inspired by the aromatic and savoury flavours of Egyptian cuisine, we bring you Ful Medames, or fūl, which is a staple stew in Cairo. Traditionally made in and poured out of a large metal jug, this stew consists of cooked fava beans served with olive oil, chopped parsley, and a variety of vegetables and spices such as cumin, garlic, onion, lemon juice and chilli pepper. The Middle Eastern dish is topped with our healthy dressing consisting of oregano, thyme, extra virgin olive oil, and coconut vinegar.

Chef’s note:

Cut short on prep-time by using canned fava beans, easily available in your local store’s canned food aisle or the international section. If you want to do it all from scratch, start by soaking dry fava beans in water.



Ingredients:

  • 3 tablespoons of Boombay’s Oregano + Thyme Dressing
  • 1/3 cup of Kidney beans or Pinto beans
  • 1 Tomato
  • 1 Garlic clove
  • 1 tablespoon Lemon juice
  • 1 Green Chilli
  • Salt to taste
  • 1 small Onion
  • Thyme leaves to garnish
  • 1 teaspoon of Oil

Method

Prep
  1. Soak the beans for 8 hours and pressure cook them completely while retaining the texture
  2. Finely chop the garlic, green chilli, onion and tomato
  3. Clean the thyme leaves and keep them aside

Cook
  1. Heat oil in a pan and cook the onion until softened
  2. Add garlic and green chilli to the pan and cook until the raw aroma is gone
  3. Next, add the tomato and cook it to a mushy consistency 
  4. Then add the cooked beans along with 1 cup of stock 
  5. Bring the mixture to a boil before reducing it to heat and simmering it for 5 to 10 minutes
  6. Take out the mixture in a bowl and top it with our Oregano + Thyme Dressing
  7. Enjoy the Ful Medames with a slice of warm pita bread and salad

Garnish

Add finely chopped onions and thyme leaves for even more flavour and herby aroma
