Chilli Cheese Sandwich

Inspired by European and Irish cuisine, this popular Indian street food is usually enjoyed as an evening snack, appetizer and sometimes, a quick and easy, morning breakfast as well. Traditionally prepared by spreading chilli-cheese mix between two slices of bread, in this recipe, we also add a layer of 100% natural Garlic Vegan Mayo for that extra punch of sweet and spicy flavours.

Chef's note:

Swap out the fresh green chillies for jalapeño peppers for a tangy kick.


  • 2 tablespoons of Boombay's Garlic Vegan Mayo
  • 2 slices of your favourite Bread (preferably Sourdough, Focaccia or Ciabatta)
  • ¼ cup of your choice of Shredded Cheese (preferably Cheddar)
  • Butter to toast the beard (Olive Oil for vegan)
  • 1 small Chilli

Products Used:


  1. Shred the cheese and place it in a bowl 
  2. Chop the chilli finely
  3. Add it to the bowl of cheese and mix well
  1. Place bread on a chopping board
  2. Spread our Garlic Vegan Mayo on bread and add the cheese-chilli mixture on top
  3. Heat a skillet on medium heat and add butter
  4. Gently lay the sandwich on the melted butter and toast it one side
  5. Cut the sandwich into triangles and enjoy


A warm bowl of tomato soup or chips are the perfect sides to this comfort snack
